Job Summary:
Responsible for the preparation and production of south/north (east) Indian cuisine in a fast-paced working environment. The right candidate will provide hands-on culinary skill to deliver excellent quality food and service to the customer.
Kothur Indian Cuisine is a specialty Indian Cuisine established in 2004 and has served many loyal guests their favourite dishes and drinks, becoming more than just a place to have a nice meal, but rather a gathering spot to celebrate friends and family. Kothur offers a bouquet of hand-picked south/north (east) Indian cuisine dishes, chosen from various parts of the country to suit the global palate. The menu features an extensive array of selections among authentic south/north (east) Indian cuisine to dedicate the craft of home cooking away from home.
We are seeking a skilled and passionate Line Cook to join our kitchen team and help us maintain our reputation for culinary excellence. As a Line Cook at Kothur, you will be an integral part of our kitchen team, responsible for preparing and cooking a variety of dishes that combine south/north (east) Indian cuisine food flavours. You will work in a fast-paced environment, collaborating with other kitchen staff to ensure dishes are prepared to the highest standards of quality and consistency. Your attention to detail and ability to work efficiently will contribute to the overall success of our kitchen.
Job Responsibilities:
· Prepare and cook full meals, individual dishes and specialty foods as instructed by chef;
· Participate in planning menus;
· Ensure consistent and high-quality food preparation and presentation;
· Order, and maintain inventory and supplies;
· Train and supervise staff in meal preparation and cooking;
· Work with minimal supervision;
· Prepare and adapt dishes for customers with allergies and intolerances;
· Work with specialized cooking equipment (deep fryer, Tandoor Clay Oven, etc.);
· Ensure cleanliness and hygiene is maintained including cleaning kitchen and work areas;
· Prepare South and North Indian cuisine dishes like Idly, Vada, Dosa, Sambar, Chutney and Butter chicken, White sauce, onion sauce and Varieties of naan breads;
Position Requirements/Skills:
· Completion of a college, CEGEP or other non-university certificate or diploma from a program of 3 months to less than 1 year;
· Previous experience as a Cook in a professional kitchen for 3 to 5 years;
· knowledge of south/north (east) Indian cooking techniques and flavours is highly desirable.
· Well versed in health and sanitation laws
· Strong attention to detail and the ability to follow recipes and instructions accurately;
· Excellent time management and multitasking skills;
· Ability to work effectively in a fast-paced environment;
· Strong team work and organizing skills;
· Willingness to work flexible hours, including evenings and weekends;
· Must be reliable and a team player.

Working Conditions:
· Must be organized and pay attention to detail, especially allergy and spice level requests;
· Fast-paced environment to meet orders in timely manner;
· Physically demanding, as must be standing on feet for long hours;
· Exposure to hot ovens and grills;
· Handling heavy loads (up to 40 pounds);
· Exposure to cold refrigerators;
· There are typical safety concerns and hazards associated with a restaurant at the work location. These hazards include minor burns, dropping heavy equipment, cuts from sharp knives, chemical burns/irritations from cleaning supplies, using the oil fryer, operating the tandoori clay oven, etc.
Work Hours:Minimum30 to 44 hours per week, with occasional overtime. Shift work, including early mornings, evening and night shifts. Must be flexible to work weekends and holidays.
Wages: $34.07 per hour, and over time rate of $51.10 per hour will apply after 44 hours of work per week.
